This past weekend I made a huge batch of chicken orzo soup by substituting orzo for the usual rotini pasta that I use in my crock pot chicken noodle soup. It turned out quite delicious and the orzo holds up quite well in the crock pot. One issue when cooling soup with noodles, the hot soup continues to cook the noodles and causes more swelling. I liked the way the orzo held it’s shape better than the rotini or egg noodles. I’ve found smaller noodles such as ditalini or orzo to freeze well. I like adding uncooked pasta to all my hot crock pot soups in the last thirty minutes of cooking. This keeps me from having to boil the pasta or dirty another pot. It’s just plain easier and you know I love easy
I had some extra chicken orzo soup to give away on Sunday when I found out that my student pastor was sick with a cold. You know what they say about homemade chicken soup; it’s nourishing for a cold. I was able to give away a quart jar like this one above.
