There are two ways I make cookies ahead of time. We love fresh from the oven cookies and now that I have a toaster convection oven with these dough balls come in quite handy. However, on busy school mornings, I like to have a lot of baked cookies ready to go. So what does this busy mom of four do? She bakes them all ahead of time and freezes the cookies in a gallon size freezer bag. The kiddos pack frozen cookies in their lunch boxes and they are thawed by mid-morning or sooner! I have two batches of cookies ready for back to school. That’s about seven dozen. It might last a month with six people packing lunches. Then we’ll move onto brownies :0
