Yes, I have an obsession with my crock pot as you can tell below. My four kids were out 4.5 school days last week and it was tiring on this momma. However, we made the best of it, sled some and ate well. I try to keep things simple, make a lot at once, cool and freeze leftovers. We tend to eat Friday and Saturday night leftovers on Sunday. I like to take this day off and the kitchen is closed for cooking-REHEATING only. Try it sometime, it works well.
On with the week’s menu:
- Crock Pot chicken noodle soup and grilled cheese sandwiches for kids, salad for parents
- Crock Pot Chicken Fajita Bowls with carmelized onions, brown rice and fixings {shoe box fajita chicken}
- Crock Pot Teriyaki Chicken and brown rice with frozen veges
- 5 minute tacos, pico de gallo and tortilla chips
Crock pot Quick Beef Chili, cornbread waffles
- Weekend Treat: No Bake Dark Chocolate Bars {I’m enjoying this new recipe, treated as fudge, eaten in small portions because of the fat content. I limit the kids to two small squares and it’s truly a sweet treat.
- Make ahead Breakfast: Granola ,World’s Easiest Boiled Eggs, blueberry muffins
