I’ve been on a sabaatical due to the flu. If you’ve followed my blog for a while, you’ve noticed this is the first week I have not posted my weekly menu. The reason why I didn’t post my plan on my usual Monday is because on Saturday evening I was not feeling 100% and by Sunday morning I knew I either had the flu or strep throat because of my headachache and pains. I ended up going to urgent care and getting a prescription of Tamiflu which worked well considering I did not get a flu shot this past fall/winter. Lesson to self: get a flu shot. It put me in bed for four straight days, but I started feeling better by Thursday and here I am blogging today.
And I missed cooking for five whole days which is a record for me! I decided to do some items on the whim today and thought I’d share it with you. One of my wonderful friends brought our family two rotisserie chickens, rice, corn and carrots. The family scrapped the bones of the first chicken while I was in bed and I saved the second set for a round of crock pot chicken broth which I was able to use for freezer enchilada sauce and more.

This afternoon I’ll make meatless southwest freezer wraps and we’ll have black bean and rice bowls for dinner, easy peasy.
I’ve started a batch of shoebox dough for
- cinnamon swirl bread loaves for the weekend. I’ll bake three and freeze two loaves on Saturday.

My 6-year-old got new glasses. His exact words after realizing he could see letters from afar, “I was blind, but now I can see.” No wonder God tells us to be childlike!
After months of prayer and trying to figure out what I want to be when I grow up, lol, I’m returning back to the teaching field which I used to do before my first child was born. I want to have the same schedule as my children and teaching husband and I’ve accepted an interim position teaching high schoo foods and nutrtition courses 1 and 2. I’m super pumped and looking forward to teaching again! I’m praying the interim will allow me to have a full-time position in the fall.

I will still blog and have more to share about what I’m doing with the students as well. I’m going to add a teaching tab. We’re going to do a school catering business and so many fun projects that I’m so excited about it. Perhaps if you homeschool, you can glean from what we’re doing or just have fun reading about all the fun stuff high school family and consumer science students do.
I’ve got one week to get my ducks in a row {I mean my freezer in order} so the transition will go smoothly for my family. My current goal is to take inventory and make sure we have at least six planned meals a week. I’m also going to do a pantry makeover so I can cook/bake more efficiently on the weekend. I’m making my own chalkboard labels on mason jars which I’ll share.
