It was a fun packed day serving others and cooling off on the Parkway. My two youngest children and husband went to help serve others at a local church in our community. It’s a fantastic ministry I had this on my bucket list to do for some time. In many ways, it resembles serving at the Steadfast home in Asheville because we had the opportunity to help prepare the meals and visit with the people. However, today we had two hours beginning at 9:30 and then we had lunch plans with family.
My six-year-old immediately loved the idea of cracking eggs for the fried squash. She cracked eight eggs all by herself. That’s my girl!
My eight-year-old got his hands into brushing bread loaves with olive oil, which is right up his alley.
I was impressed with the gorgeous fresh local food they were serving for 100. Here’s a glimpse of squash lasagna.
We also helped tear freshly harvested lettuce for a supreme salad bar. I am looking forward to helping with next week’s menu and gaining some new recipes to share!
After serving others, we had a simple vegetable lunch for my husband’s parents with yummy cornbread and we headed to the Parkway to cool off.
My nephew came along which put us up to five kiddos instead of our usual four. The more the merrier; right?
After the falls, we had watermelon on the parkway and had a long hour delay due to an accident. An eight-year-old girl ran out into the road and got hit by a car. They said she was conscientious when she left by ambulance, but my heart and prayers go out to all the families involved. I can’t fathom what it must feel like.
I’m blessed to enjoy God’s creation and beauty with my family and I’m so grateful to be able to serve others today.
