Indoor Grilled Fajitas

Even though it’s cool outside, we are still having our favorite meal, fajitas indoors.

I like to use my Panini press which grills it on the both sides very quickly compared to the stove-top. And I have a secret ingredient to share with you. It gives it the smoky outdoor flavor without having to brave the cold.

This recipe can easily be done on a Foreman type grill, griddle or stove-top grill pan. Pick your kitchen equipment and try out this easy recipe.

I like to slice my onions and peppers into strips. I also love semi-circles of zucchinni and/or squash if it’s available. It gives it a California style flair and helps stretch your meat further.

In most cases, I use my favorite fajita steak or chicken marinade. I would grill the veges first and then the raw meat last and combine the two. However, since I’m working and I was asked to try John Soules Fajita Chicken {frozen and precooked}, it was a convenience night for us. We serve ours with homemade pico de gallo and avocado and pair the side dish, crock pot refried beans.

Now you know the options of using convenience chicken or marinated chicken or beef {thawed for 24 hours in a thawing box}.

Here is the secret to indoor grilling: Liquid Smoke found in the BBQ aisle of the grocery store. It gives a wonderful grilled flavor to your indoor foods.

Now crack open your cupboard or go out and invest a $1 and some change for this secret that makes food taste like it was made in a restaurant.

 

Indoor Grilled Fajitas

Ingredients:

  • 1/2 pound fajita chicken or steak strips, grilled AFTER the vegetables
  • 1 large zucchini, cut into semi-circles
  • 1 onion, sliced
  • 1 bell pepper, any color, sliced
  • 2 garlic cloves, pressed
  • 1 Tablespoon liquid smoke
  1. Combine the vegetables, garlic and liquid smoke. Grill until slightly crisp tender.
  2. Grill the fajita chicken or beef until done.
  3. Combine the meat and veges in a large serving dish.
  4. Place on warm corn or flour tortillas with your favorite toppings.

Restaurant style fajitas doesn’t get any easier in the winter. Spring is coming, but let’s pretend we are grilling outdoors.
