Weekly Freezer Cooking Menu

This past week we had another snow day. I hope it’s our final day of missing school. I was super proud of my 11-year-old starting our crock pot Mexi-chicken last week. This is the easiest freezer meal you’ll ever prep, I promise. I made several batches a few weeks ago and I have the tutorial ready for you on Wednesday :)

I’ve been prepping our weekly breakfast: steel cut oats and world’s easiest boiled eggs and some type of quick bread or granola. I also make sure we have at least two crock pot meals on game nights when we get home later. It’s very helpful to have dinner ready without any fuss.

Last, I make a lunch box treat for the week. This week I made a batch of whole wheat chocolate chip cookies substituting mint chocolate chips for the regular ones. I stash these in the freezer for the kids when they absolutely crave something sweet after dinner and my three-year-old daughter’s lunch box. I also prepped a batch of energy bites for the fridge.

Our dinner menu:

  • Crock Pot Teriyaki chicken, brown rice {from the freezer}, habachi zucchini and onions
  • 5 minute tacos, crock pot black beans, tortilla chips, carrots
  • Freezer southwest wraps, salad
  • Crock Pot Chicken Philly sandwiches on 30 minute rolls, carrots and asparagus
  • Artichoke Chicken, red potatoes, peppers and onions medley, asparagus
  • Artichoke Pizza {with chicken leftovers and food processer pizza crust}, salad
