I have a habit of freezer cooking when I am stressed and you wouldn’t believe the amount that I cooked this weekend. It started with black bean intentions and moved into homemade naan for this week’s menu. Then I was able to barter naan for fresh goat cheese from some friends which led to making more naan since we didn’t have a freezer stash any more. I’ll take about ten minutes to make two pans of manicotti this afternoon, one for our sick neighbor and one for us for dinner. Oh how I love easy meals.
