I love easy salads to go and this is a summer favorite I throw together with my freezer Italian Chicken. I can get two meals from six chicken breast halves that I’ve marinated in bulk. The day before I plan to serve them, I throw a quart size bag in my thawing box and the next day I either grill indoors or outside. I use my grilling tip and cover with foil to lock in the juice and moisture of the chicken. Next, I assemble salads and/or pitas. My kiddos like their chicken strips in a pita pocket with a little Mozzarella or Parmesan. Wrap the pitas in foil to keep it well chilled. The foil helps hold the cool temperature.
I prefer mine on a bed of spinach with all the usual Greek toppings. It makes the perfect pool, creek or picnic adventure meal for my entire family. I tend to prep four salads to go, two for diner and two for the next day. Plus I can make four pita halves for my kiddos.
If you haven’t tried the super easy Italian chicken marinade, you really must! It’s a huge timesaver and it tastes amazing on so many things, including this low-carb, low-fat Greek salad. It’s also superb on a bed of Alfredo noodles!

Greek Chicken Spinach Salad
- 3 cups spinach
- 5 olives, sliced
- 2 tablespoons sliced pepperoncini
- 1 tablespoon feta cheese
- 1 roma tomato sliced
- 1/4 cup sliced cucumber
- 1 Italian Chicken breast grilled and sliced
- Store-bought or Homemade Greek dressing, optional {I often use red wine or balasamic vinegar when I want to keep it low-cal}
