We had an incredible wind storm last night and our Internet was down for most of Sunday. My oldest son wasn’t feeling well and I stayed at home and did some serious freezer cooking which I’ll post tomorrow. I couldn’t believe how much I got done in such a short amount of time.
It’s our Spring Break and we’ve decided to have a staycation and do some fun things in Asheville. We plan to go to the Greenville Zoo and spend some time hiking, biking and enjoying our family time. So I’m glad I did all my freezer prep today rather than spread it out over the week like I planned. Now I have all week to play
I’m excited about the 70′s weather and grilling yummies.
Our menu this week:
- Spicy Cajun Shrimp with grilled vegetables and shoe box sandwich bread
- Chocolate chip white whole wheat pancakes {how to freeze pancakes}, make ahead blueberry compote, fried eggs and turkey bacon
- Crock Pot BBQ meatballs, macaroni and cheese, asparagus
- Black Bean burgers with avocado and pico de gallo, strawberry spinach salad
- Ranch Cheddar Burgers, grilled potato skins and grilled asparagus
- Pizza muffins, salad
- Leftovers
