Crockpot Philly Chicken (freezer meal)

Have you tried a chicken philly sandwich yet? Better yet, have you tried it from your crock pot? I LOVE easy crock pot meals and this one is no exception. I can make four chicken meals when I make Mexi-chicken and this one at the same time. With a little prior ingredient planning I can make four meals in less than 30 minutes which is a major score in my book! I hope you enjoy this freezer meal as much as I do.

Try throwing this freezer meal in a bag with some hoagie rolls and sliced cheese for another no cook ministry meal for a friend or family in need. They will appreciate your thoughtfulness and creativity.

This recipe yields two freezer meals split between two 1-gallon size freezer bags.

Ingredients:

  • 6 boneless chicken breasts, cut into strips like tenders
  • 3 peppers, red or green, sliced
  • 2 onions, sliced
  • 4 garlic cloves, minced, divided in half
  • 2 tablespoons worcestershire sauce, divided in half
  • 1 teaspoon black pepper, divided in half
  • 2 tablespoons, liquid smoke {found in the bbq aisle}, divided
  • 2 tablespoons butter, divided {optional}

Directions:

  1. Divide chicken tender strips in half among two labeled 1-gallon size freezer bags.
  2. Season with worcestershire,  liquid smoke, pepper and minced garlic. Massage in bag.
  3. Divide peppers and onions among bags. Place on top of chicken with 1 tablespoon of  cubed butter.
  4. Squeeze air out and seal. Freeze.

Crocking Day:

  1. Carefully, cut open and place vegetables facing down with chicken facing up. 
  2. Crock on low for 6-8 hours or until done. 
  3. Serve with a slotted spoon on toasted hoagie rolls or buns.
  4. Melt Cheddar, Mozzarella or Provolone cheese on top. 
  5. Serve with marinara if desired.

Cooking alternative: Thaw kit and grill peppers and onions on a panini press. Then proceed to grill chicken strips until 165 degrees internal temperature. Add an additional splash of worcestershire for additional flavor if desired.

We’ve tried both cooking methods and I prefer the grilled method when I have an extra 15 minutes to grill, however, crocking is the way to go if you want to indulge immediately!
